Is it possible to pickup/return early in the morning or very late at night?

It's possible, but not always. When you are selecting the pickup and drop-off times, the system will not allow you to pick a time outside the opening hours of the local rental office. In some occasions, the business might allow for out of hours delivery or collection, and if thats the case, it will be clearly stated in the "addons" section of the motorbike.
